The contribution of liquid chromatography for food label

As the saying goes, bread is the staff of life, this shows how important it is for us the food! With the fast are pace of modern life, more and more younger have no time to cook. Thus promoted the rapid development of the fast food market.According to institutional data, the total turnover of the convenience fast food market on Taobao and Tmall platforms in 2020 will reach 21.3 billion yuan, and the market scale is considerable. According to the White Paper on China’s Food Consumption Trends in 2021, packaged food, self-heated food, prepared dishes and other categories will continue to accelerate in 2021, while health-focused sub-categories such as meal replacement and functional food will receive more attention, and the overall consumer market will continue to innovate.

With the constantly improve of people’s life, both citizens and contry pay great attention of Nutrition and food issues. On November 2, 2011, the Ministry of  Health announced my country’s first national food nutrition labeling standard-”General Rules for Nutrition Labeling of  Prepackaged Foods” (GB28050-2011), which guides and regulates nutrition labeling. The “General Principles of Nutrition Labeling of Prepackaged Foods” includes a list of nutritional ingredients, a nutritional claim, and a functional claim of nutritional ingredients. The national food safety standard “General Principles for Nutrition Labeling of Prepackaged Foods” stipulates that the nutrition label of prepackaged foods shall provide consumers with food nutrition information and descriptions of its characteristics.

The food label usually included the following Nutrition parameter information:

Vitamin

Protein

Minerals

Carbohydrates

Dietary fiber

Fat

Cholesterol

The effort of HPLC for food label

HPLC technology can qualitatively and quantitatively analyze the components present in complex food matrices. It is an ideal choice that meets nutrition labeling requirements:

Vitamin

Vitamins are a type of trace organic substances that humans and animals must obtain from food in order to maintain normal physiological functions. They play an important role in the growth, metabolism, and development of the human body.

Vitamins can be divided into two categories: fat-soluble and water-soluble. C18 HPLC Column can provide a universal separation method for a variety of fat-soluble vitamins. UHPLCS C18 HPLC column is an ideal choice for preparing purified samples. While ensuring good peak shape, the higher specific surface area of silica gel can carry a higher sample amount, and it has high retention and resolution. C18 is a HPLC column with a more versatile C18 functional group bonded on a high-purity silica gel matrix. The specially developed tail-capping technology makes the column almost non-adsorbing to ionized compounds. Besides, the uniform particle size ensures the stable flow of the mobile phase and ensures that the chromatographic column has a low column pressure.

Water-soluble vitamins usually use ion pairing agents to analyze such polar components to shorten the retention time.

Carbohydrate

Suitable for milk and dairy products. According to the type of sugar to be tested, the scope of application can be expanded by changing the concentration of the mobile phase acetonitrile solution.

Proteins

The building blocks of proteins are amino acids.Reverse high performance liquid chromatography can be used to effectively separate and analyze common amino acids. Compared with other methods for analyzing amino acids, reverse high performance liquid chromatography has a reduced detection time.

Cholesterol

At present, the quantitative analysis methods of cholesterol mainly include: colorimetry, thin layer chromatography, gas chromatography, high performance liquid chromatography and enzymatic method, etc.Among them, the detection method of high performance liquid chromatography is that the sample is saponified with anhydrous ethanol-potassium oxide solution, extracted with a mixed solution of petroleum ether and anhydrous ether, dissolved in methanol and quantified, measured by high performance liquid chromatography, and quantified by external standard method.

As a powerful separation technology, HPLC plays a very important role in determining the nutritional parameters on food nutrition labels.
